East of the city, behind a line of pastel shophouses, lives the Peranakan heartland — the Straits-born Chinese community whose kitchens married Hokkien technique to Malay spice over four generations of coastal wealth. Katong was where the merchants built seaside villas; Joo Chiat was where their cooks shopped.

The Nyonya kitchen is the island's most demanding: buah keluak nuts soaked and scrubbed for days, laksa gravy rich enough to need no bowl-tilting, kueh in tiled colours steamed layer by patient layer. Katong laksa — noodles cut short, eaten with a spoon only — is the neighbourhood's calling card and the subject of a turf war we recount but do not referee.
