Bak kut teh is the district's signature — the Teochew style, peppery and clear, brewed for dock coolies who needed breakfast to be medicine. Around it: tau sar piah pressed and baked in shophouse ovens, carrot cake seared black and white at the market, oyster omelettes lacy at the edge, braised duck under a master sauce older than the stall's lease.
