东海岸The east coast was seaside kampong and coconut estate before land reclamation pushed the shoreline out in the 1970s and gave the island a park, a lagoon, and long rows of seafood tables with their sleeves rolled up.
Crab is the headline: chili crab — invented on a Kallang pushcart in the 1950s — and its hotter, drier sibling black pepper crab, both built for gravy-soaked mantou and ruined shirts. Around them: sambal stingray on banana leaf, satay fanned over charcoal by the lagoon, barbecue wings burnished with honey and char.
Dinner is outdoors, communal, and paced by the crack of shells. Order too much. Everyone does. That is the correct amount.
